With 40 years of experience under his belt, Chef Luigi is a world-renown authority on Italian cuisine and culture. He believes that food gives us the opportunity to respect past traditions and celebrate the present, while looking forward to the future. On Aperto’s seasonal menu, inspiration from the “past” reveals Chef Luigi’s childhood on a farm in Basilicata, Italy, with a wide selection of salumi/ house cured meats, and an extensive list of house made bar ingredients. His “present” interpretations include contemporary Italian classics such as crudos, sustainable kitchen practices, and nose to tail butchering that Chef Luigi learned in Italian culinary school, practiced in world class establishments all over the globe, and has spent the last few decades re-interpreting for discerning DC palates. The “futuristic” influences on the menu include a vibrant array of unique, root-to tip uses of heirloom vegetables, legumes, and grains – reinvented recipes that are easy on both the environment and the waistline - perfectly suited to the future of fine dining.
