Daikaya’s Ramen Shop Introduces Cold Noodle Ramen Dishes for Summer

Daikaya, the popular izakaya & ramen shop, owned by Partners Daisuke Utagawa, Yama Jewayni and Executive Chef/Partner Katsuya Fukushima, is excited to add to the lineup two cold noodle ramen dishes for summer. These dishes will be available exclusively at the 40-seat ramen shop starting late June; in addition to their already popular flavors: spicy miso, miso, shio (salt), shoyu (soy) and vegan. Ramen prices range from $11.50 to $12.75, with sides for $5 each.  

The first new summer noodle dish is the Hiyashi Ramen, which is commonly served in ramen shops across Japan through the summer season. The Hiyashi Ramen is made with boiled and chilled to order noodles, citrus soy vinaigrette, cucumber, simmered bamboo, leeks, and blanched bean sprouts tossed in sesame oil and sesame, wood ear mushroom, shredded cabbage, chashu (roasted pork slices), corn, cherry tomato, ramen egg, nori and carrots. The zesty Hiyashi Spicy Sesame Ramen is Daikaya’s own creation, and a nod to fans of their spicy miso ramen. This dish is made with boiled and chilled to order noodles, spicy sesame vinaigrette, simmered bamboo, leeks, blanched bean sprouts tossed in sesame oil and sesame, wood ear mushroom, shredded cabbage, chashu (roasted pork slices), corn, cherry tomato, ramen egg, nori and carrots.
