Destination Dining: Restaurateurs are organizing trips abroad for adventurous foodies

A taste of homemade ricotta cheese, right out of the vat in Italy. Dinner at a restaurant in someone’s home in Havana. A visit to a plant where cashews are processed in southern India.

Your tour guides? Some of the Washington area’s best-known chefs.

Three local restaurateurs — Indique’s K.N. Vinod, Cuba Libre’s Guillermo Pernot and Domenico Cornacchia of Assaggi Mozzarella Bar — are getting out of the kitchen and into airports, leaving their restaurants to their sous chefs and leading small groups of tourists on trips abroad to sample local cuisine.
