Chef Mario Raymond has brought fresh, locally sourced cooking to The Washington Court Hotel since 2003. His approach is deceptively simple: have a deep-rooted respect for your raw ingredients and work carefully to enhance the nature of those ingredients. Using these tenets, Mario creates a comfortable upscale dining experience for his patrons in Bistro 525 and for his banquet clients. Mario’s foremost focus, however, is on hospitality. He believes that his primary responsibility is to make his guests happy.
