Chef Joel Hatton Test Drives in His New Kitchen for Valentine’s Day

Washington, DC – February 2015 – After two months of upgrading its kitchen and refreshing the dining room décor, 1905 is ready to re-open its doors. The Shaw restaurant will offer a special Valentine’s Day menu in the dining room this Saturday, February 14th, before officially reopening for regular dinner service on Tuesday, February 17th

“Most of our guests won’t even notice the vast majority of changes we’ve made to the restaurant,” says owner Tony Lucca. “But these renovations will go a long way to making 1905 better than it ever was.“

The biggest undertaking of the recent renovations was a complete update to Chef Joel Hatton’s kitchen, which will be rolling out a new winter menu when the restaurant reopens next week. New additions to the dinner menu include Confit Chicken “Salad” Rillettes; Local Mushroom Toast with Porcini Mayo; Cornmeal Fried Catfish with Black-eyed Peas, Smoked Tomatoes and Jalapeno Tartar; and a Grilled Double-Cut Pork Chop with Buttered Cabbage, Johnny Cakes and Spice Apple Sauce. Many on the 1905 staff spent the last several weeks working at sister restaurant El Camino that opened just before renovations began in November 2014. “It’s been nice to have our veteran staff help us get up and running in Bloomingdale, but it’ll be great to have the 1905 team back ‘home’ again,” says Lucca. 

One familiar face who will be missed behind the bar when 1905 reopens is longtime bar mistress Lyn Holland, who has left to pursue other opportunities in catering and at 3 Stars Brewing Company. 

Valentine’s Day

The reopening comes just in time to celebrate Valentine’s Day! Chef Hatton and pastry chef Stephanie Milne are breaking in their new kitchen with a special three-course prix fixe menu on Saturday night, February 14th for $45 per person. The menu includes:

Chestnut-Foie Gras Soup with Sour Cherries, Pickled Mushrooms & Toast

Salt-Roasted Beets with Smoked Ricotta, Onion Ash, Blueberry Vinegar & Pistachio Crunch

Local Steak Tartare with Capers, Quinoa, Quail Eggs, Worcestershire & Baguette
 

2nd Course (choice from 4 options)

Farro Risotto with Baby Potato Chips, Early Spring Peas, Truffle Butter, Soft Egg & Herbs

Magret Duck Breast For 2 with Cherry Gastrique, Sweet Potatoes & Grilled Pea Shoots

Grilled Salmon with Lobster-Braised Fennel, Hakurei Turnips & Parsley Broth

Smoked Double-Cut Pork Chop with Buttered Cabbage, Johnny Cakes & Red Wine Apple Sauce
