Sumptuous Spring Cocktails Debut at Black Jack

Black Jack Bar Manager E. Jay Apaga has debuted a new spring cocktail menu, pairing his signature offerings of classics, twists on classics and Black Jack creations with seasonal flavors that are vegetal, bright, fruit forward and a few bubbly and frozen options.
 
Nominated for the 2014 RAMMY Cocktail Program of the Year, Apaga and his team have created a line-up of seasonal sips featuring house-made syrups, sodas and liqueurs, as well as flavor-enhancing garnishes like crushed candied ginger.
 
New cocktails for the season include:
 
Elderflower Monk
A play on the classic Tom Collins with a dash of Elderflower and Yellow Chartreuse, finished with a slap of basil to add a vegetal quality.
 
Bright Lights, Big City
Lying somewhere between classics French 75 and the Rickey, Hum Botanical is the driving spirit mixed with Tanqueray, fresh lemon and a sparkling Brut.
 
Grilling Season
This smoky cocktail that first appeared last year returns featuring award-winning corn whiskey Balcones Brimstone, Laphroaig, Aperol and Dolin Blanc; garnished with a slice of Benton’s Smoked Ham.
 
The Robert Palmer
Veev Acai Berry Liqueur, Texas-based Deep Eddy Vodka with fresh tart cherry and lemon juice and house ginger syrup, rimmed with crushed candied ginger.
 
Frozen Hurricane
Black Jack’s frozen version of the New Orleans staple features light rum, dark rum, fresh passion fruit and lime juice, finished with Peychaud’s bitters
 
Two crowd favorites: the Amaro-based Black Jack Iced Tea and tequila- (Apaga’s personal favorite spirit) based Paloma (with the option of traditional or spicy) are both on the menu as well.
