SALT [sawlt]

It is an element in Greek cooking that gives flavor or zest. Salt flavor is one of the basic tastes making salt a ubiquitous food seasoning. The early Greeks worshipped salt no less than the sun, and had a saying that, "no one should trust a a man without first eating a peck of salt with him."


PEP⋅PER [pep⋅er]

Pepper is one of the most common spices in European cuisine and its descendants, having been known and prized since antiquity for both its flavor and spiciness. It may be found on nearly every dinner table in some parts of the world. Pepper was known in Greece at least as early as the 4th century BC.


O⋅REG⋅A⋅NO [uh⋅reg⋅ug⋅noh]

An herb native to Greece, and the Mediterranean region, it has an aromatic, warm and slightly bitter taste. Oregano is an indispensable ingredient in Greek cuisine. It is usually added to the lemon-olive oil sauce that accompanies many fish or meat barbecues and some casseroles. Oregano is high in antioxidant activity and comes from a Greek word meaning "joy of the mountains." It can be found growing wild on mountainsides of Greece where it is an herb of choice.


OL⋅IVE OIL [ol⋅iv] [oil]

The most characteristic and ancient element of Greek cuisine is olive oil. Olive oil is used throughout the world, but especially in the Mediterranean. Greece devotes 60% of its cultivated land to olive growing. It is the world's top producer of black olives and has more varieties of olives than any other country. Olive oil has been more than mere food to the peoples of the Mediterranean: it has been medicinal, magical, an endless source of fascination and wonder and the fountain of great wealth and power.


LEM⋅ON [lem⋅uhn]

Type of citrus fruit that has many culinary uses including marinating, seasoning and drinking. Greeks consider them as powerhouses when bringing out the flavor of other foods, especially used in fresh fish and finishing off almost every Greek dish.

Cooking should remain rooted in tradition and it should be real and delicious, letting the simple, natural flavors stand out. And the restaurant should be beautiful and comfortable, making the whole dining experience greater than the sum of its parts.
