Founded in 2019, Zeppelin Restaurant & Bar brings together the precision of Edomae-style sushi and the smoky allure of Japanese charcoal-grilled yakitori—all set against the backdrop of the Golden Age of the great passenger airships. At its heart is Chef Minoru Ogawa, a Tokyo native who trained under his master-chef father in Japan, presenting a refined Omakase experience and impeccably crafted nigiri at the sushi bar. Zeppelin is the collaborative vision of Chef Ogawa and hospitality veterans Adrian Williams, Ari Wilder, and Micah Wilder—the team behind Chaplin’s—who together created a space where tradition, innovation, and storytelling take flight.
