Restaurants, Summertime, and Overworked Equipment: What Could Possibly Go Wrong?
Summer can be great for restaurant business, but it is not always kind to the kitchen. With higher temperatures, patio service, seasonal staff, and equipment working overtime, your back-of-house operation can heat up quickly, and not just because of the sauté station.
When the kitchen is under pressure, small hazards can become big problems, and they often seem to show up at the worst possible time, like right in the middle of the dinner rush.
Cooking equipment remains one of the leading causes of restaurant fires, with grease buildup, unattended cooking, overheating appliances, and poorly maintained exhaust systems among the most common concerns. As summer heats up, restaurant owners should pay close attention to three areas:
- Grease and hood systems. A busy kitchen creates more grease-laden vapors, which can accumulate in hoods, ducts, filters, and fans. Make sure hood cleanings, inspections, and filter maintenance are current and documented.
- Overworked equipment. Refrigeration units, ice machines, fryers, grills, and HVAC systems often work harder in the summer. Dirty coils, blocked ventilation, frayed cords, overloaded circuits, or delayed repairs can increase the risk of breakdowns, fires, and business interruption.
- Heat exposure for employees. Kitchen staff are already working near hot surfaces, ovens, fryers, and dish machines. Add summer temperatures and heat illness becomes a real concern.
A few simple steps can help reduce risk:
- Review your fire suppression inspection schedule.
- Keep combustibles away from cooking equipment.
- Train employees on emergency shutoffs and fire extinguisher use.
- Watch for warning signs of overheating equipment.
- Encourage hydration and cooling breaks for kitchen staff.
Summer is a great time to serve more guests, not to discover a preventable hazard hiding behind the line.
