Lamb Breakdown Butchery Class at Via Umbria

House Butcher Scott Weiss and Executive Chef Liam LaCivita team up to put on an exhibition of the art of butchery that will prepare you for Easter. Join in as we butcher a whole lamb from nose to tail, which will be followed by a tasting of some of our handiwork, featuring some tenderly braised lamb with asparagi milanese finished with a seasonal panna cotta.
