Friday, September 6th, join Streetsense's Bethesda office for their next trend panel — The Anatomy of A Successful Restaurant and Bar — moderated by Streetsense’s Managing Director of Eat + Drink, Jay Coldren. He’ll be joined by Derek Brown, author of “Spirits, Sugar, Water, Bitters: How the Cocktail Conquered the World,” and president of Drink Company, and Colan Vance, Director of Operations for The Indigo Road Restaurant Group, for a roundtable discussion about what makes great restaurants + bars and what’s in store for the future of the industry.

Meet the Experts

Derek Brown
Derek Brown is a leading spirits and cocktail expert and president of Drink Company, which owns and operates 2017 Spirited Award winning "Best American Cocktail Bar" Columbia Room as well as PUB, a rotating pop-up bar that's housed the wildly-popular Miracle on 7th Street, Cherry Blossom PUB and Game of Thrones PUB. Author of Spirits, Sugar, Water, Bitters: How the Cocktail Conquered the World, he has also written about drinks and drinking for The Atlantic, The Washington Post and Bon Appétit magazine, among other publications.

Colan Vance
Currently the Director of Operations for The Indigo Road Restaurant Group, Colan Vance has a passion for hospitality and extensive experience within the food and beverage industry. Prior to joining Indigo Road, he held senior management roles at highly acclaimed hotels and fine dining restaurants across the United States — including Quince, The French Laundry, and The Inn at Little Washington.

Jay Coldren
As Managing Director of the Eat + Drink Studio, Jay coordinates the activities of a team of talented industry experts on projects that include concept visioning and development, operational analysis and oversight, and full concept implementation. Jay has spent over 30 years in the restaurant and hospitality sector and has served as the Managing Director for Dean & Deluca, Global Brand Leader for EDITION Hotels, VP of Lifestyle Brands for Marriott International, and has held key leadership roles at iconic properties such as The Inn of the Anasazi, La Mansion del Rio, and the Inn at Little Washington. As an independent restaurateur, Jay has co-developed concepts in Santa Fe, Baltimore, and Washington DC.
